Our Story

We have always had a love of the outdoors, both of us being able to grow up in the “country”, with the ability to roam 100+ acres. The woods was our play ground and the adventures are endless.

In 2013, the long winters in Upstate New York and with the creeping of Spring upon our lips, we needed something to do for us to be outside and decide to tap our first trees, 19 to be exact. I believe that year we made 4.5 gallons of amazing Maple Syrup.

Like with all of our hobbies and life, we like a challenge and every year we would grow a little bit. At one point we were collecting 77 buckets with our ATV, and it would get complicated and sometimes aggravating as we were in the thick of mud season or snow season depending on what the weather wanted to throw at us. To ease our collection we started running tubing in 2018.

In 2020 we set- up small vacuum stations to start drawing the sap out of the trees.

In 2021, we installed 2700’ of 1” mainline that will carry all the sap from all trees to one collection point. There will be no more struggling with the spring mud madness!

Our Inspiration

It all started with the love of a mother. Mary Jo Medick, from very early on was a frugal saver. She made wise decisions in her younger years with the knowledge and encouragement given to her by her parents, Joseph and Nan Munkwitz. She was able to purchased her first home just south of Albany, New York, all by herself. After getting married, she sold this house which allowed her to buy the land of her dreams to raise her growing family.

The house was not perfect, with snow blowing through the windows in the winter, and the hand dug well drying up many summers, that would spawn trips to the laundry mat. She took in all animals that showed up at the door and were abandoned by heartless people that just dropped them off in the “country”. She lived for her 3 boys, which overshadowed the abusive marriage she endure for so many years. She was a caregiver and true empath caring for so many people and animals.

Like for many, life can be unfair, but she truly did her best. Six months before her untimely death, she was told her first grandchild would arrive. She loved him with all her being without even meeting him yet. Her dream was to have him “run through the same woods” that his father did. Our son Gabriel, was given his name by his Nana.

She wished that the home she loved most would be able to stay in her family to be loved by many future generations. She enabled my family to turn the land she loved into a sanctuary for her grandchildren. Our children can grow and learn to be stewards of the land the animals on it and most importantly to be good people.

Because of her we will be donating a portion of our proceeds to a domestic violence charity, WellSpring and The Good Catch Dog Rescue.
